Around the turn of the millennium, “lesbian bars couldn’t afford to pay the rent,” said Jen Jack Gieseking, who is writing a book on the history of lesbian bars, in a phone interview.

Gieseking added that women generally find partners outside of bars: through activism, volunteering, potlucks.

Jen Jack Gieseking, an urban cultural geographer at the University of Kentucky, Lexington, said that like Laziz, future queer restaurants will be intersectional, especially about gender.

“We’ll see more consideration for how to create an antiracism space,” said Mr. Gieseking, the author of “A Queer New York.”
