Thanksgiving, for all its excess, is not a particularly textural meal—pillowy mashed potatoes, velvety gravy, candied yams collapsing under their own syrup.

Their fried chicken, mac and cheese and candied yams are consistently spectacular.

“One of my most iconic dishes is the Maple Bacon & Eggs: soft farm eggs, candied bacon and robiola fonduta,” Lewis continued.

The list of kaleidoscopically flavorful dishes include caramel plums with cinnamon, sour cream and candied hazelnuts; steamed leeks with sour cream; panko-coated egg and green; and roasted and sun-dried tomato dip with “Polish dukkah.”

In a blender or food processor, grind candied nuts and remaining ¼ cup sugar until the mixture is fine crumbs, like coarse cinnamon sugar.
